Among the metabolites produced by some molds, mycotoxins are a general term for toxins with harmful effects on humans and animals. Mycotoxins have been identified in a wide range of foods including cereals, nuts, spices, and fruits. In Japan, limits for total aflatoxins (sum of aflatoxins B1, B2, G1, and G2), aflatoxin M1, patulin, and deoxynivalenol in foods and aflatoxin B1, deoxynivalenol, and zearalenone in feeds have been established. In countries other than Japan, regulatory limits have also been established for other mycotoxins.
